Christmas Time
As the year end is drawing near, I look back at the cupcake tasting I had in late May & think .....did I really make so many cute cupcakes for so many people!? It amazes me that everyone has loved my cupcakes. Nothing makes me happier than making cupcakes for my friends & family & watching their face when they first see them!!!!! I look forward to next year & to making more people smile :) all because of little ol cupcakes! I actually had to stop saying yes to people for the month of December! After all it is Christmas time & I have to make it special for my own little family. Thank you to everyone that has sampled my creations this year & Kupkakes by Kimmie wishes you all A VERY MERRY CHRISTMAS & A WONDERFUL NEW YEAR!!!!!!

Better than those cupcake shops in Hoboken
WHAT?! Last weekend I did kupkakes for an engagement party. The couple & alot of their friends live in Hoboken where there are ALOT of bakeries & cupcake shops. The mother of the bride told me the wedding couple & their friends thought the kupkakes made by Kupkakes by Kimmie were better, they loved them & they were the hit of the party! WHOO HOO!!! Are you kidding me? WOW I was so excited to hear this I was jumping up & down! Even though I was so excited I think alot has to do freshness, I make my kupkakes the day of the event or bake the kupkake the day before at the earliest for huge orders. Everyone should know very few bakeries bake their cakes the day of the event most are frozen so maybe that had something to do with why they thought mine tasted better. But whatever the reason I was elated, & now they can't wait to have kupkakes for the shower! WHOO HOO again :)

Foodnetwork Magazine Halloween Cupcake Contest
Well I've entered another contest! FoodNetwork Magazine which is very exciting although the chances of winning something so huge is slim to none! I imagine there will be 1000's of entries. My witchiepoo is made completely out of fondant & the stars on her hat & cape are edible glitter. There is a toothpick down through her head to stabilize but other than that it is completely edible :) Witchie poo is sitting on a Red Velvet Cupcake with Orange(colored not flavored) buttercream icing. I had meant to use a Halloween cupcake liner but I forgot so I just sat the baked cupcake in a Halloween liner....how I could have forgot that is beyond me! I guess I was too worried about taking the photos because all you had to do was upload a photo of your cupcake! I wish there was more to it like sending along your recipe or something! I believe the entries have to be in by November 10th or sometime in November...so I will keep everyone updated if I hear anything. Oh by the way the prize is $500. to spend at The FoodNetwork Store & the cover of the magazine(I imagine for next years October edition) I was excited about the possibility of buying a pot & pan set & my daughter said, " MA it's the COVER for Pete Sakes!!!!!" LOL

Septemberfest Baking Contest 2nd place winning recipe
Pina Coloda Cupcakes
Preparation
Pour cake batter into 2 dozen paper cup lined cupcakepans.
Bake at 325° for 20 to 25 minutes or until a wooden pick inserted in center of each layer comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.
Ingredients
1/2 cup butter, softened 1/2 cup shortening 2 cups sugar 3 cups cake flour 4 teaspoons baking powder 1/2 teaspoon salt 2/3 cup milk 2/3 cup water 1 teaspoons vanilla bean paste 1 teaspoon coconut emulsion 1 teaspoon creme bouquet 6 egg whites

Beat butter and shortening at medium speed with an electric mixer until creamy; gradually add sugar, beating well.
Combine flour, baking powder, and salt; add to butter mixture alternately with milk and water, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in extracts.
Beat egg whites at high speed with an electric mixer until stiff peaks form; fold about one-third of egg whites into batter. Gradually fold in remaining egg whites.

Use any Rum Buttercream Frosting & pineapple/ coconut filling of your choice.......hey I can't give away all my secrets ;)

Hamilton Twp. Septemberfest Baking Contest
Well today was the annual Septemberfest Baking Contest. I entered Pina Colada cupcakes. They were one of only 7 entries maybe because you were not allowed to use a mix the entries had to be homemade ( I figured of course they did). The winners will not be announced until this Tuesday the 20th, I really do not understand the reason for this being there were only 7 entries. I could see if there were a 100, but I think the juding panel could have just said give us 15 minutes & we'll announce the winner. But nevertheless it was a fun thing to do & of course I hope to place in the contest but I'm sure every single contestant hopes the very same thing. I will post the recipe on Tuesday win or loose they were delicious cupcakes. People that watched the judging were allowed to sample the baked goods after the judges tasted everything & from what I saw everyone that ate my Pina Colada cupcakes really looked like they enjoyed them. :)

Busy busy Weekend!!!!
Well this is a very cupcakey type of weekend! There is alot of baking going on. 3 dozen chocolate on chocolate & 2 dozen vanilla on vanilla for a shower! They have lime green, purple & hot pink daisies & butterflies. Then there is another 2 dozen vanilla on vanilla with an Eagle's football team theme for a birthday party. And the most exciting cupcakes of the weekend are pina colada cupcakes for a baking contest at my town's Septemberfest! Pictures & a recipe for the pina colada cupcakes will be posted in the next day or so :) So all my cupcake fans wish me luck tomorrow! I hope I get a ribbon....fingers crossed :)

Orders just keep rolling in.....
I would like to thank everyone that I have made cupcakes for! I love making cupcakes for my family & friends. This week I made cute little vanilla cupcakes with sprinkles in the batter like "Funfetti" cupcakes with purple buttercream icing & little yellow fondant flowers for my daughter's 24th birthday. I can't believe she chose such a simple design but they were adorable. I am also making vanilla cupcakes for a friend's 50th birthday party. She owns a cleaning business & the cupcakes have little fondant cleaning supplies & 50's on them! They are so very cute! I can't wait to put them together so I can post the pictures. I'm sure everyone will love them as much as I do :)
